"At 14, I decided I wanted to be a chef. When I turned 18, I started working in the kitchens of Florence. That is where, for the first time, i saw my traditions and culture applied in a restaurant setting. At 20, I decided to explore the world and left Italy. I moved to Amsterdam where I worked for the hotel company (Soho House), here I experienced different nationalities and tasted different flavors that are not typical Italian After a year and a half my roots brought me to an Italian environment, and I joined the team of la Fiorita, a small new restaurant in the heart of Amsterdam; here I worked daily with fresh house made pasta, focaccia, sauce ,and condiments. In 2021 I decided to leave Amsterdam for New York City. After a few visits, I was lucky to join the Rezdora's Restaurant team in NY. I We keep found my home because we keep the tradition of Italy alive with our cooking methods and classes.
