Fiori di zucchini ripieni (stuffed zucchini blossoms)
Carefully remove the stamen from each zucchini blossom, making sure not to tear the petals. Gently rinse the blossoms under cold water and pat them dry with a paper towel. Set them aside.
In a mixing bowl, combine the ricotta cheese, grated Parmesan cheese, fresh basil, minced garlic, salt, and black pepper. Mix well until all the ingredients are evenly incorporated.
Take each zucchini blossom and gently open the petals. Spoon about 1 tablespoon of the cheese mixture into the center of each blossom. Be careful not to overfill them.
Gently twist the petals to enclose the cheese filling, ensuring it is fully sealed. Repeat this process with the remaining blossoms.
In a deep skillet or frying pan, pour enough vegetable oil to reach a depth of about 1 inch. Heat the oil over medium heat until it reaches approximately 350°F (175°C).
In a separate bowl, whisk together the all-purpose flour and sparkling water until you have a smooth batter.
Dip each stuffed zucchini blossom into the batter, coating it evenly. Allow any excess batter to drip off before carefully placing the blossom into the hot oil. Fry the blossoms in batches to avoid overcrowding the pan.
Fry the stuffed blossoms for about 2-3 minutes on each side or until they turn golden brown and crispy. Use a slotted spoon or tongs to carefully transfer the fried blossoms to a paper towel-lined plate to drain excess oil.
Serve the stuffed zucchini blossoms while they are still warm. They can be enjoyed as an appetizer, side dish, or even as a light main course. You can also serve them with a side of marinara sauce for dipping, if desired.
