What is ‘nduja?
‘Nduja, (pronounced en-doo-ya) is a spicy, spreadable sausage and hails from the town of Spilinga in Calabria.
It’s made from pork, fat, herbs, spices and local Calabrian chilly peppers, which give the sausage its heat and spicy red color.
'Nduja doesn’t require cooking...and it’s great with anything.
According to chef Jacob Kenedy (Bocca di Lupo, London),"You can whack it in almost any pasta. It's the go-to ingredient for a bit of a kick. It's like a non-vegetarian chili oil."
'Nduja is gaining popularity in the US and for a good reason.

How to use 'nduja
